| Milling | It consists of two grinders for
the reception of red grapes, with thresher and adjustable rolls, with a grinding capacity
of 300 qq/h. Another stainless steel grinder for the reception of white grapes with a thresher and a roller mill, with a capacity of 100 qq/h. In addition, two pneumatic presses with a capacity of 80 qq/h each; and two stainless steel tanks with refrigeration equipment, for maceration. Everything is in an inert gas atmosphere. |
| Fermentation | It consists of two large naves.
One is at ground level and the other under ground. The first one is exclusively used for
the primary fermentation and the claryfing of the wine. The second one is used for the
secondary fermentation of new wines and their initial conservation. Both of them make a total capacity of 6.800.000 litres. |
| Conservation | It consists of two aisles. One of
them is exclusively devoted to age red wines in Nancy oak casks, having a capacity of
1.250.000 litres. The other aisle has a capacity of 1.500.000 litres in stainless steel
tanks. |
| Stowage | Under ground, where up to
2.000.000 bottles can be stowed. |
| Laboratory and Enology | In charge of managing the winery
and controlling every process and its final result. State of the art equipment. |
| Red wine | The traditional method is used,
with controlled fermentation under moderate temperatures and different macerations
according to the grapes and the special characteristics of each harvest. |
| White wine | After milling, maceration in refrigerated tanks, in an inert gas atmosphere, with different times according to each grape variety, in order to extract perfumes. Later musts clarification. Sowing of selected yeasts and fementation at low temperatures. |
